With green teas very little oxidation is allowed. Oxidation is stopped by applying heat; either with steam, a traditional Japanese method; or by pan firing, the traditional Chinese method. Japanese teas tend to be the greenest and most vegetative in flavor. Chinese teas are a bit darker and deeper in flavor.
