Rooibos (Aspalathus Linearis) is a bush with fine needlelike leaves. The leaves are bright green when first harvested. They are then chopped and bruised, which starts the oxidation process, and then dried in the sun. When steeped, the resulting herbal tea is fruity, refreshing and caffeine free. The mild flavor of rooibos takes added flavors particularly nicely.
Research undertaken in Japan indicates that rooibos contains significant quantities of polyphenols which are powerful antioxidants. Antioxidant levels rival those of green teas.
Treat and prepare Rooibos just as you would true teas. Use about 1 teaspoon per serving, steep about 3 minutes or to taste, and enjoy just as you would any favorite tea. Try it hot, cold, with milk and/or sugar. Rooibos is a lovely alternative to true teas and is rapidly growing in popularity.
